Had some friends over for lunch last week and since I had been stockpiling blood oranges from our Frog Hollow CSA box, I decided to build the lunch menu around this springtime fruit.
Our Ladies-Who-Lunch Menu:
- Potato, Leek and Green Garlic Soup from Ina Garten’s Back to Basics
- Blood Orange and Bearss Lime Escabéche (I added avocado and left out bell pepper; also used Bearss lime juice instead of lemon juice)
- Wild arugula, lettuce and fennel salad with walnuts and citrus vinaigrette
- Sliced roast beef, turkey, mortadella and salami
- Assorted cheeses
- Organic Strawberries
- Blood Orange Olive Oil Cake from Smitten Kitchen
